Of course - too much fun is barely enough. Peter and I have intended to make the Puerco Pibil from the “Once upon a time in Mexico” DVD extras (this is the video which inspired us).
Since I’m in Sydney next week we decided to do it today. Yesterday was shopping, grinding and marinating. Today was wrapping and baking and stuffing ourselves senseless.
The point of this dish is that if it is really really good, the chef may be shot. It was delicious, but the pork was a little too lean, so no one got shot tonight. (Also no guns in the house. An oversight perhaps).
It’s delicious. I’ve never used annatto seeds before, and they have a interesting and appealing flavour. Slow cooking is always a winner, and wrapping things in banana leaves is a recipe for a good time to start with.
Notes - use more banana leaves on the bottom of the baking dish. Use cheaper and more “marbled” pork, we got pork loin (the recipe calls for “butt” which appears to be shoulder butt, not bottom butt). Make sure that you have enough people to eat it. Make sure you have limes for the tequila to drink with it.
The end to the perfect day was checking in for my flight tomorrow from my computer. This means having to arrive at the airport no more than 30 minutes in advance, instead of 90. Hooray Emma for reminding me about online check in.
I’m tired, stuffed full and have that feeling that comes from a day full of great experiences.
